FRESH GINGER COOKIES

 

INGREDIENTS

 

2 1/4 CUPS (270G) ALL-PURPOSE FLOUR

1 TSP BAKING SODA

1/2 TSP SALT

2 TBSP GRATED FRESH GINGER

3/4 CUP (170G) FLORA

1 CUP (200G) WHITE SUGAR

1/4 CUP MOLASSES

1 EGG

2 HAND FULLS OF OATS

METHOD

  1.    IN A LARGE MIXING BOWL, COMBINE FLOUR, SODA, AND SALT.

 

  1.     GRATE THE GINGER FINELY.

 

  1.     IN A SEPARATE BOWL, BEAT GINGER, BUTTER, AND SUGAR UNTIL LIGHT AND FLUFFY. BEAT IN                  MOLASSES AND EGG. THEN GENTLY FOLD IN FLOUR MIXTURE. CHILL FOR 1 HOUR.

 

  1.     PREHEAT OVEN TO 350 DEGREES F

(175 DEGREES C).

 

  1.     ROLL DOUGH INTO 1 INCH BALLS

FLATTEN TO APPROX.1CM THICK. PRESS TOP SIDE DOWN INTO YOUR OATS AND PLACE 2 INCHES            APART ON UNGREASED BAKING SHEETS.

 

  1.     BAKE UNTIL EDGES START TO BROWN, ABOUT 15-20 MINUTES. CENTERS WILL BE SLIGHTLY SOFT. LET STAND ON COOKIE SHEETS 1 MINUTE AND REMOVE TO RACKS TO COOL COMPLETELY.
